
True to form, I didn't cook tonight. I didn't make a salad either(!). I cheated and went out for dinner with friends. But since it was an Italian restaurant, I am sharing this classic Insalata Caprese in order to stick with my "week of salads." I did make it over the weekend so it kind of counts. :) The key is using really great ingredients: Mozzarella di Bufala, ripe tomatoes (although August will be especially killer), fresh basil, a pinch of sea salt, and extra virgin olive oil. I guess it could be considered a side salad, but with all of that fresh mozzarella, the fat and calories suggest otherwise!

this is one of my all time favorite summer side salads. hip hip hooray for tomato season. great to see you last night.
